  • Grilled Lobster Tails Smothered In Cascabel Chili Butter

    Ingredients

    • 1 Tbsp. Extra virgin olive oil
    • 1/2 c. Finely-minced onion
    • 1/4 tsp Cascabel chili pwdr
    • 1 Tbsp. Ancho chili pwdr
    • 2 Tbsp. Fresh lime juice
    • 1/2 lb Unsalted butter softened Salt to taste Freshly-grnd black pepper to taste
    • 8 x Maine lobster tails Extra virgin olive oil for brushing

    Directions

    1. Heat 1 Tbsp. extra virgin olive oil in a small saucepan over medium heat. Add in onion and cook till soft. Add in cascable and ancho pwdr and cook for 1 minute, let cold. Fold onion mix into softened butter, add in lime juice and season with salt and pepper to taste. Place in a bowl and chill till hard.
    2. Preheat grill.
    3. Brush lobster tails with oil and season with salt and pepper. Place meat-side down and grill 3 to 4 min or possibly till cooked through. Remove from heat and top immediately with butter.
