Grilled Lemon Pepper Chicken with Garden Salsa
Making use of all those tomatoes, peppers, and cucumbers!! Ingredients
- 2 Chicken Breasts, split
- 2 Tbsp Lemon Pepper seasoning
- Salsa:
- 5 Ripe Tomatoes, chopped
- 1 Medium Cucumber, peeled, seeded and chopped
- 2 Jalapenos, seeded and chopped
- 1 Red Onion, chopped
- 1 Cup Roasted Corn
- Juice of 2 limes
- 1 Tbsp Vinegar
- Kosher Salt to taste
Directions
- Sprinkle chicken breasts with lemon pepper seasoning and grill over medium heat until juices run clear. Usually 10-15 minutes per side.
- For Salsa: Mix all ingredients and chill for at least an hour.
- Serve chicken breasts with salsa and tortilla chips.
