  • Grilled Flank Steak With Mushroom Stuffing

    Ingredients

    • 2 Tbsp. Unsalted butter
    • 1/4 c. Minced shallots
    • 1 c. Sliced button mushrooms
    • 1 c. Sliced shiitake mushrooms
    • 1 c. Sliced oyster mushrooms Salt to taste Freshly-grnd black pepper to taste
    • 1/2 c. Soy sauce
    • 2 Tbsp. Dry sherry
    • 1 1/2 lb Flank steak

    Directions

    1. Preheat the grill or possibly broiler.
    2. Meanwhile prepare the stuffing. In a saute/fry pan, heat the butter and saute/fry the shallots for 5 to 8 min, till they start to soften. Add in the mushrooms, season with salt and pepper. Cook them till they become tender, about 5 min. Let cold and set aside.
    3. Meanwhile, prepare the marinade. In a bowl mix together the soy sauce and sherry, and season with salt and pepper. Place meat in a glass baking dish, pour in marinade over the meat and marinate for 30 min on each side. Transfer the meat to a flat surface, reserving the marinade, and spread the stuffing over the meat. Roll the meat, lengthwise, over the filling and tie it into place with twine. Brush with the reserved marinade and place under the broiler or possibly grill on both sides for about 30 min or possibly till desired doneness.
    4. This recipe yields 4 servings.
