  • Grilled Corn Salsa

    This is the perfect recipe for Spring and Summer. Packed with flavors that everyone will enjoy! you can add more peppers for more heat. This will become a favorite I'm sure. This is my first recipe to share, so excited!

    Ingredients

    • 4 ears corn, husked and silks removed and nonstick cooking spray
    • 1/3 cup chopped red onion ( 1 small )
    • 1 fresh jalapeno, seeded and chopped
    • 1/4 cup snipped fresh cilantro
    • 2 tablespoons lime juice
    • 2 tablespoons olive oil
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • Lime wedges (optional)

    Directions

    1. Coat corn with cooking spray and cook on directly on grill 12 to 16 minutes or until tender (grilling is a must, it adds so much flavor) . When corn is cool enough to handle remove kernels from cobs (about 2 cups). Add everything together and chill for at least 2 hours.
