    Ingredients

    • 1/4 cup lemon juice
    • 2 tablespoons lemon zest
    • 1/4 cup olive oil
    • 2 teaspoons dried oregano
    • 3 cloves garlic - minced
    • 2 pounds boneless/skinless chicken breasts - cut into 1 inch cubes
    • salt and pepper
    • wooden skewers - soaked in water
    • 2 cups grape tomatoes - halved
    • 2 cups cucumbers - sliced
    • 1/2 cup red onion - sliced
    • 3 tablespoons lemon juice
    • 3 tablespoons olive oil
    • 1 teaspoon dried oregano
    • salt and pepper

It’s no secret that we’re big sports fans in the Southern Soul house. This time of year can be especially exciting with each of us cheering on our favorite Major League Baseball team. The boys each have their own team that they root for as do I. I was brought up in a community where baseball was EVERYTHING, so I guess it’s just in my blood. I have great memories of keeping score (which is not easy task, if you know what I mean) and learning important strategies about the game. Now, things are a bit different. Sure, I still pull for my team but I also have another job that’s just as important. Grilling up great food to help celebrate two of America’s most beloved pastimes – baseball and barbecue! My team, the Washington Nationals inspired one of my favorite Greek recipes – Grilled Chicken Souvlaki Skewers with a Chopped Greek Salad. Easy to make and easy to eat, these skewers turned out perfectly grilled and were a huge hit with my family and friends. To make my “Taste of the Game” recipe, I grabbed a bag of Kingsford Charcoal and fired up my grill. I love using a charcoal grill because of the amazing flavor that’s achieved by cooking over hot, glowing embers. There’s just something special about the combination of fire and smoke, then waiting until just the right time to cook your favorite meats and veggies.  With my grill ready and the Kingsford coals at just the right temperature, I grabbed my chicken skewers. The recipe from “Taste of the Game” had an incredible marinade for the chicken souvlaki skewers. Lemon juice and zest, combined with olive oil, oregano and garlic give the chicken a Mediterranean flavor that’s amazing. Once the chicken had absorbed all those savory flavors, I threaded them onto skewers and headed to the grill. My chicken turned out perfectly and all that was left to do was toss up my salad. With fresh tomatoes and cucumbers plus a little onion I whipped up my dressing and drizzled it over the veggies. Everything came together in no time and I was ready for game time! I served up my “Taste of the Game” dish, family style and let everyone grab some salad and a skewer. Grilling never tasted to good and has never been easier! Course: Main Course, Salad Cuisine: American Servings: 4 Author: Donya | asouthernsoul.com Ingredients Grilled Chicken Souvlaki Skewers 1/4 cup lemon juice 2 tablespoons lemon zest 1/4 cup olive oil 2 teaspoons dried oregano 3 cloves garlic - minced 2 pounds boneless/skinless chicken breasts - cut into 1 inch cubes salt and pepper wooden skewers - soaked in water Chopped Greek Salad 2 cups grape tomatoes - halved 2 cups cucumbers - sliced 1/2 cup red onion - sliced 3 tablespoons lemon juice 3 tablespoons olive oil 1 teaspoon dried oregano salt and pepper Instructions Combine lemon juice, zest, olive oil, oregano, garlic, salt and pepper in a zip top bag. Add chicken and toss to coat. Place bag with chicken in a container and marinate in the refrigerator for 30 minutes. Remove chicken from fridge and divide cubes into 8 portions. Thread onto skewers. Discard bag with marinade. In a medium size bowl, add tomatoes, cucumbers, onions, lemon juice, olive oil, and oregano. Toss together. Season with salt and pepper. Set aside. Build a charcoal fire for direct grilling using Kingsford Charcoal and preheat to 400 degrees. Lightly oil grates to prevent sticking. Place chicken skewers on grill and cook for 10-12 minutes, turning often until the chicken is cooked through. Serve chicken with salad, family style. Enjoy! Want to save this recipe?
