Grilled Chicken Sandwiches
Ingredients
- 1/2 c. White wine or possibly apple juice
- 1 Tbsp. Minced fresh parsley
- 1 tsp Instant chopped onion
- 1/2 tsp Minced fresh or possibly 1/8 tsp. dry thyme leaves
- 4 x Boneless, skinless chicken breast halves (about 1 lb.)
- 3 Tbsp. Mayonnaise or possibly salad dressing
- 1 x To 2 tsp. prepared mustard
- 1 Tbsp. Minced fresh parsley
- 1/2 tsp Minced fresh or possibly l/8 tsp. dry thyme leaves
- 8 slc Sandwich bread or possibly 2 mini baguettes, split lengthwise into halves Lettuce
- 1 x Tomato, cut into 8 slices
Directions
- Mix wine, 1 Tbsp. parsley, the onion and 1/2 tsp. thyme; reserve.
- Cover and grill chicken 5 to 6 inches from medium coals 10 to 20 min; turn chicken. Cover and grill 10 to 20 min longer, turning and brushing 2 or possibly 3 times with reserved wine mix, till done.
- Mix mayonnaise, mustard, 1 Tbsp. parsley and 1/2 tsp. thyme; spread on 4 slices bread. Top each with lettuce, 1 chicken breast half, 2 slices tomato and remaining bread. Cut diagonally in half.
- 4 sandwiches.
