  • Grilled Chicken Caesar Pasta Salad (Kt)

    Ingredients

    • Vegetable cooking spray
    • 4 x 4 ounce boneless skinless chicken breast halves
    • 8 ounce whole wheat pasta bowties
    • 1 Tbsp. extra virgin olive oil
    • 2 Tbsp. water
    • 1/2 c. balsamic vinegar
    • 3 x cloves garlic crushed
    • 3 Tbsp. grated asiago or possibly parmesan
    • 1 x cucumber diced
    • 1 bn green onions white and some green chopped
    • 1 x red bell pepper diced
    • 1 x tomato minced
    • 2 x 8 ounce cans mandarin oranges liquid removed
    • 1 sm head romaine lettuce torn
    • 6 x mushrooms sliced
    • 1 x carrot grated

    Directions

    1. Heat a nonstick skillet over medium heat and spray with Pam. Spray the chicken with Pam and saute/fry till cooked. Remove and set aside. Meanwhile, cook the pasta without oil. Drain, rinse, and drain again. While the pasta and chicken cooks make the dressing by combining the vinegar, oil, water, garlic, and cheese. Combine the liquid removed pasta, cucumber, red bell pepper, and mandarin oranges. Drizzle with a few Tbsp. of dressing. Make a tossed salad by combining the romaine, mushrooms, tomato and carrot. To serve place the tossed salad on a plate. Top with some of the pasta mix. Top the pasta with the chicken that you have sliced.
    2. NOTES : I made this for dinner tonight. Everyone liked it.
