  • Grilled Chicken Caesar Salad

    Ingredients

    • 4 x skinless boneless chicken breast halves
    • 1/2 c. light Caesar salad dressing divided
    • 8 c. torn romaine lettuce
    • 12 x cherry tomatoes quartered
    • 1/4 c. shredded Parmesan cheese
    • 1 c. garlic-flavored bagel chips Plastic wrap as needed

    Directions

    1. In an 8-inch square baking dish, place chicken breasts. Pour half of Caesar salad dressing over chicken. Turn chicken to coat both sides. Cover with plastic wrap and chill for at least 30 min.
    2. Divide romaine lettuce among 4 plates. Sprinkle with cherry tomatoes. Cover with plastic wrap and chill till serving time.
    3. Grill chicken over medium heat till done, 5 to 6 min per side. Cut grilled chicken into strips. Place warm grilled chicken over romaine and tomatoes. Sprinkle with remaining salad dressing, Parmesan cheese and bagel chips.
    4. This recipe yields 4 servings.
