  • Grilled Brats And Circus Onions

    Ingredients

    • 1 lrg Onion, thinly sliced
    • 1 lrg Green bell pepper, thinly sliced
    • 2 Tbsp. Vegetable oil
    • 2 x Garlic cloves, crushed through a press
    • 3/4 tsp Caraway seed
    • 1/2 c. Beer
    • 1/4 tsp Salt
    • 1/8 tsp Freshly grnd pepper
    • 6 x Bratwurst or possibly knockwurst
    • 6 x Warm dog buns Grainy mustard

    Directions

    1. Prepare a warm fire in a covered charcoal or possibly gas grill (see note). While coals heat, in a large frying pan, cook the onion and pepper in the oil over medium heat till the vegetables are softened, about 3 min. Add in the garlic and caraway seed and cook till the onions are golden brown, about 2 min. Add in the beer and cook till the liquid is reduced in volume by about half, about 3 min. Season with the salt and pepper. Remove from the heat and cover to keep hot. Split the bratwurst lengthwise, but don't cut all the way through. Grill till nicely browned on both sides, about 8 min. During the last 2 min of cooking, set the buns, cut sides down, at the edge of the grill to toast lightly. To serve, spread the cut sides of the buns with mustard, add in a bratwurst, then spoon on the pepper and onion mix.
    2. To check grill temperature, count the seconds you can hold your hand, palm side down, 2 to 3 inches above the rack, till it feels uncomfortable: 2 seconds for warm.
