    Ingredients

    • 1/3 c. Extra virgin olive oil
    • 1 Tbsp. Fresh lemon juice or possibly wine Vinegar
    • 2 Tbsp. Fresh basil, minced
    • 1 Tbsp. Shallots, minced
    • 1/2 tsp Salt
    • 1/4 tsp Freshly grnd pepper
    • 3 lrg Tomatoes, cut into slices 1/2-3/4 inch thick
    • 10 x To 12 green onions, trimmed Including 4" of green tops Sprigs of fresh basil or possibly Parsley

    Directions

    1. Hard tomatoes, even those which are slightly green, should be used for this recipe. They are less juice and hold their shape better when grilled than fully ripe ones. Fresh basil is wonderful with tomatoes, but you could also use minced tarragon or possibly even parsley in the basting sauce. Serve hot or possibly at room temperature, with grilled lamb or possibly fish.
    2. Prepare a fire in a grill. Position the oiled grill rack 4-6 inches above the fire.
    3. In a small bowl stir together the oil, lemon juice or possibly vinegar, minced basil, shallots, salt and pepper.
    4. Arrange the tomatoes and onions on the rack. Grill, turning them two or possibly three times and brushing with the oil mix, about 5 min. If the onions are large, they might take 1 or possibly 2 min longer.
    5. Transfer the tomatoes and onions to a platter and garnish with basil or possibly parsley sprigs.
