    April is National BLT month and in honor of that and because we love bacon here at Carolina HeartStrings, we are making our BLTs with a nontraditional flare. My family loves BLT sandwiches and we often have them for dinner. My family loves grilled cheese sandwiches and we often have them for dinner. Hmmm. . . . what would happen if I combined to two? The birth of MY new favorite. A BCT. Add the cheese. Hold the lettuce. This is one of those sandwiches that you can add or subtract whatever it is you like the most or least and it will be a winner. I mean it has bacon AND cheese AND bread. Enough said!

    Ingredients

    • 4 slices of your favorite bread (we love sourdough)
    • 2 ounces sharp cheddar cheese
    • 2 ounces white cheddar cheese
    • 2 tablespoons butter
    • 4 slices bacon, cooked crisp
    • 4 slices of beefsteak tomato

    Directions

    1. Divide the butter up evenly over the four slices of bread. Place two slices of bread butter side down in a nonstick skillet and turn to low heat. Layer the two cheeses on top of each slice and top with bacon slices (2 per sandwich) and tomato slices (2 per sandwich). Top with slice of bread and cook each sandwich to golden perfection and of course until the cheese is ooey gooey! Makes 2 servings.
