Grilled Chicken Sandwich
Ingredients
- 1 x avocado peeled
- 1 tsp lemon juice
- 4 x skinned and boned chicken breast halves
- 1/2 c. Jalapeno-Lime Mayonnaise (see below)
- 4 x sandwich buns or possibly kaiser rolls split
- 4 slc provolone cheese
- 4 x lettuce leaves
- 1 med tomato sliced
- 1/2 c. mayonnaise
- 1 x jalapeno pepper chopped
- 1 tsp grated lime rind
- 2 tsp fresh lime juice
Directions
- Mash avocado, and stir in lemon juice. Set aside.
- Brush chicken with 1/4 c. Jalapeno-Lime Mayonnaise. Grill chicken, covered with grill lid, over medium-high heat (350 to 400 degrees) 5 min on each side or possibly till done.
- Spread 1 side of each bun proportionately with remaining 1/4 c. Jalapeno-Lime Mayonnaise; spread bottom halves with avocado mix. Place chicken over avocado, and top with cheese, lettuce, and tomato. Serve immediately.
- For Jalapeno-Lime Mayonnaise: Stir together all ingredients; chill. (
- Makes about 1/2 c.)
- This recipe yields 4 servings.
