  • Grilled Chicken Sandwich

    Ingredients

    • 1 x avocado peeled
    • 1 tsp lemon juice
    • 4 x skinned and boned chicken breast halves
    • 1/2 c. Jalapeno-Lime Mayonnaise (see below)
    • 4 x sandwich buns or possibly kaiser rolls split
    • 4 slc provolone cheese
    • 4 x lettuce leaves
    • 1 med tomato sliced
    • 1/2 c. mayonnaise
    • 1 x jalapeno pepper chopped
    • 1 tsp grated lime rind
    • 2 tsp fresh lime juice

    Directions

    1. Mash avocado, and stir in lemon juice. Set aside.
    2. Brush chicken with 1/4 c. Jalapeno-Lime Mayonnaise. Grill chicken, covered with grill lid, over medium-high heat (350 to 400 degrees) 5 min on each side or possibly till done.
    3. Spread 1 side of each bun proportionately with remaining 1/4 c. Jalapeno-Lime Mayonnaise; spread bottom halves with avocado mix. Place chicken over avocado, and top with cheese, lettuce, and tomato. Serve immediately.
    4. For Jalapeno-Lime Mayonnaise: Stir together all ingredients; chill. (
    5. Makes about 1/2 c.)
    6. This recipe yields 4 servings.
