  • Greek Walnut Cake

    Ingredients

    • 1 c. walnuts
    • 2 c. flour
    • 1 1/2 tsp baking power
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1/2 tsp grnd cinnamon
    • 1/4 tsp grnd cloves
    • 1 c. butter or possibly margarine softened
    • 1 c. sugar
    • 6 lrg Large eggs
    • 1 Tbsp. grated orange zest
    • 8 ounce plain low-fat yogurt
    • 1 c. sugar
    • 1/2 c. honey
    • 3/4 c. water Grated zest of 1 orange

    Directions

    1. For the Cake: Spread nuts on baking sheet and toast at 350 degrees till golden brown, 15 to 20 min. Let cold slightly then finely chop.
    2. Stir together flour, baking pwdr, baking soda, salt, cinnamon and cloves in large bowl. Set aside.
    3. Beat butter and sugar in large bowl at medium speed till light and fluffy. Add in Large eggs, 1 at a time, beating well after each addition. Beat in orange zest. Reduce speed to low; add in flour mix alternately with yogurt, beginning and ending with flour mix. Mix in walnuts.
    4. Spoon batter into greased 13x9-inch baking pan and smooth with rubber spatula. Bake at 350 degrees till toothpick inserted in center of cake comes out clean, 35 to 40 min. Cold in pan on wire rack.
    5. For the Syrup: Stir together sugar, honey, water and orange zest in 1-qt saucepan. Bring to boil over medium heat, stirring constantly. Simmer 5 min.
    6. Spoon lukewarm syrup over cake. Cold before slicing.
    7. This recipe yields 16 servings.
