Greek Style Rice With Spinach
Ingredients
- 1 1/2 Tbsp. Extra virgin olive oil
- 1 lrg Onion -- minced
- 1 1/3 Tbsp. Garlic -- chopped
- 4 c. Fresh spinach -- clean and Chop
- 3 Tbsp. Lemon juice
- 4 c. Cooked long grained rice
- 2 Tbsp. Basil -- chopped Salt and pepper to taste
- 1/4 c. Feta cheese -- crumbled
Directions
- Heat oil in a heavy skillet or possibly wok. Add in onion and garlic and cook on medium-high heat till onion is softened and transparent. Add in spinach, lemon juice and rice; cook, stirring frequently, till spinach is limp and rice is throughly heated. Toss in basil. Add in salt and pepper to taste.
- Arrange rice in a mound on a colourful platter. If you like, surround with blanched sugar-snap peas. Sprinkle rice mix with crumbled feta chese.
