  • Greek Style Shrimp With Feta Cheese

    Ingredients

    • 1 teaspoon finely minced garlic
    • 1/4 c. extra virgin olive oil
    • 3 teaspoon butter
    • 1 pound med. shrimp, peeled and deveined
    • 3 c. Del Monte tomato wedges, liquid removed
    • Salt and pepper
    • 1/4 c. bottled clam juice
    • 1 teaspoon dry oregano
    • 1 teaspoon crushed red pepper flakes
    • 3 teaspoon capers, liquid removed
    • 1/4 pound Feta cheese

    Directions

    1. In large skillet, saute/fry garlic in extra virgin olive oil and butter; remove and throw away garlic. Saute/fry shrimp till pink; remove from pan. Add in tomatoes and reduce by 1/3. Add in clam juice, oregano, pepper flakes, capers, salt, and pepper. Mix well. Divide 1/2 of sauce among individual baking dishes. Divide shrimp proportionately among dishes and spoon remaining sauce over shrimp. Crumble Feta cheese over top and bake in preheated oven at 350 degrees for 10-15 min. Feta cheese will brown but not heat in this recipe.
