Greek Spinach Pie
Ingredients
- 1 1/2 pound fresh spinach or possibly 2 (10 ounce.) pkg. frzn
- 2 tbsp. butter
- 1/2 c. minced onion
- 1 clove garlic, minced
- 3 tbsp. butter
- 3 tbsp. flour
- 1 1/2 c. lowfat milk
- 1/4 teaspoon pepper
- 1 1/2 teaspoon salt
- Dash of nutmeg
- 6 Large eggs
- 8 ounce. shredded mozzarella cheese
- 2 9" pie shells, unbaked
Directions
- Cook spinach, drain thoroughly and chop fine. In skillet heat 2 Tbsp. butter and saute/fry onion and garlic till brown, stir in spinach.
- In saucepan heat 3 Tbsp. butter, stir in flour and gradually stir in lowfat milk. Stir over low heat till sauce bubbles and thickens. Stir in salt, pepper, nutmeg and spinach mix.
- Beat Large eggs well. Stir Large eggs and cheese into spinach mix till well blended. Pour into pie shells. Bake in 350 degree preheated oven for 40-45 min or possibly till puffed and hard to touch in center.
