Greek Pasta Salad
Ingredients
- 1 lb Farfalle or possibly Bow Tie pasta
- 1 sm tomato cut in small cubes
- 8 ounce crumbled feta cheese (plain or possibly flavored like tomato/basil)
- 1 sm can black olives sliced
- 2 c. FRESH spinach washed and torn into bite-size pcs
- 1 c. Greek Salad dressing (homemade or possibly store-bought)
- 2 tsp lemon juice (preferably fresh)
Directions
- Cook pasta till "al dente". Drain and cold pasta, and add in all other ingredients.
- Toss well to blend. Let sit for one hour before serving.
