  • Greek Chicken Orzo Soup

    This is a bright, delicious, Spring chicken soup. It is easy to make and doesn't require a lot of cooking.

    Ingredients

    • 1 teaspoon canola oil
    • 1 medium onion diced
    • 3 cloves garlic, minced or pressed
    • 3 carrots, finely diced or shredded
    • 8 cups chicken stock
    • 1 cup uncooked orzo
    • 3 cups shredded chicken (about 1/2 a rotisserie chicken)
    • Juice from 1 lemon
    • 1 bunch green onions, white and green parts finely sliced
    • Salt and pepper to taste

    Directions

    1. Shred 3 cups chicken reserving bones and extra meat for another use.
    2. Cook orzo according to package directions until tender. Drain.
    3. In a large soup pot, sauté onion in oil until tender.
    4. Add carrots and sauté 1 minute.
    5. Add garlic and sauté a couple seconds, do not brown!
    6. Add chicken stock and lemon juice.
    7. Simmer until carrots are fully soft.
    8. Add orzo, chicken and sliced green onions.
    9. Salt and pepper to taste.
    10. Heat and serve.
