Greek Chicken Orzo Soup
This is a bright, delicious, Spring chicken soup. It is easy to make and doesn't require a lot of cooking. Ingredients
- 1 teaspoon canola oil
- 1 medium onion diced
- 3 cloves garlic, minced or pressed
- 3 carrots, finely diced or shredded
- 8 cups chicken stock
- 1 cup uncooked orzo
- 3 cups shredded chicken (about 1/2 a rotisserie chicken)
- Juice from 1 lemon
- 1 bunch green onions, white and green parts finely sliced
- Salt and pepper to taste
Directions
- Shred 3 cups chicken reserving bones and extra meat for another use.
- Cook orzo according to package directions until tender. Drain.
- In a large soup pot, sauté onion in oil until tender.
- Add carrots and sauté 1 minute.
- Add garlic and sauté a couple seconds, do not brown!
- Add chicken stock and lemon juice.
- Simmer until carrots are fully soft.
- Add orzo, chicken and sliced green onions.
- Salt and pepper to taste.
- Heat and serve.
