  • Grandma's Upside Down Cake

    Ingredients

    • 1 can (1 pound 4 ounce.) sliced pineapple
    • 1/4 c. Butter
    • 2/3 c. Brown sugar, firmly packed Maraschino cherries
    • 1 c. Flour
    • 3/4 c. Sugar
    • 1 1/2 tsp Baking pwdr
    • 1/2 tsp Salt
    • 1/2 c. Lowfat milk
    • 1/4 c. Shortening
    • 1 x Egg
    • 1 tsp Lemon juice
    • 1 tsp Vanilla
    • 1/4 tsp Grated lemon peel

    Directions

    1. Drain pineapple reserving 2 Tbsp. syrup. Heat butter in a 10 inch cast iron skillet. Stir in brown sugar till blended. Remove from heat.
    2. Arrange pineapple slices in sugar mix. Place a maraschino cherry in center of each slice. Combine flour, sugar, baking pwdr and salt. Add in lowfat milk and shortening; beat 2 min. Add in egg, reserved syrup, lemon juice, vanilla and lemon peel. Beat 2 min. Pour ovr pineapple in skillet, spreading proportionately. Bake in a 350 oven for 40 min. Cold on a wire rack 5 min. Invert on serving plate. Serve hot.
    3. Makes 8 servings.
