  • Grandma's Spice Cookies

    Ingredients

    • 1 pkt spice cake mix - (18.5 ounce)
    • 1 c. butter softened
    • 2 x Large eggs
    • 1 c. sweetened flaked coconut
    • 1 c. minced walnuts
    • 1 c. crushed cornflakes see * Note
    • 1 c. rolled oats
    • 1 c. raisins
    • 2 Tbsp. sugar

    Directions

    1. * Note: To crush cornflakes, place them in a plastic storage bag, seal, and crush with a rolling pin.
    2. Preheat the oven to 350 degrees. In a large bowl, combine the cake mix, butter, and Large eggs, mix well. Add in the coconut, walnuts, cornflakes, rolled oats, and raisins, mix well.
    3. Drop the dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets, flatten with a glass which is repeatedly dipped in the sugar. Bake for 8 to 12 min, or possibly till set. Cold for 1 minute, then remove from the baking sheets and let cold completely.
    4. This recipe yields about 54 cookies.
