  • Goat Cheese and Turkey Crustini

    This would be a great Thanksgiving Day "left over" snack or appetizer! I love goat cheese so when ever I can use it in a dish, I do. I tried this one once and it was pretty tasty. Plus it's easy if you already have some cooked turkey on hand. But I have used shaved deli turkey with this recipe as well... =)

    Ingredients

    • Cooked and shredded turkey meat
    • Goat cheese
    • Fresh rosemary
    • Salt and pepper to taste
    • Dried Cranberries or Craisens
    • Crusty, skinny baguette bread
    • EVOO

    Directions

    1. Pre-heat oven to 400
    2. In a small mixing bowl, place soften goat cheese salt and pepper to taste, and chunky chopped rosemary and mix well
    3. Slice baguette on a diagonal about and inch thick
    4. Using a few tbls EVOO brush both tops and bottoms of sliced bread, then layer onto a baking sheet.
    5. Toast bread in oven on 400 for 5 min or until bread begins to brown slightly
    6. Remove bread and scoop a large spoonful of goat cheese on tops
    7. Place a spoonful of turkey on top of cheese mixture and top each with a few dried cranberries or craisens
    8. Bake on 400 for approximately 10-12 minutes or until cheese mixtures browns
