GOAT CHEESE AND ONION CRANBERRY PASTRY APPETIZER
This is for you my sweet Judy You asked and I CAME UP WITH THIS I HOPE IT IS WHAT YOU WANTED,THE FLAKY CRUST HOLDS CARAMELIZED ONIONS,CREAMY GOAT CHEESE AND THE SWEET BUT TANGY CRANBERRY ,EASY BUT VERY UPSCALE GREAT FOR YOUR PARTY Ingredients
- 6-Bacon Strips,Chopped
- 2Large Onions finely Chopped
- 3Shallots ,thinly sliced
- 1/2 Tsp Sugar
- 1/2 cup White Wine
- 2-TSP DRIED THYME
- 2garlic cloves minced
- 1/4 Tsp pepper
- 1 sheet frozen puff pastry thawed
- 1beaten egg white
- 1 log 4 ozs fresh goat cheese ,cut in 12 pieces
- CRANBERRIES
- 1-12 OZ PACKAGE BERRIES
- 1/4 CUP APPLE CIDER
- 1/3 CUP SUGAR
- 1TBSPLEMON JUICE
- 1`/2 TSP CRUSHED ROSEMARY
Directions
- In a large skillet cook bacon until crisp remove from heat and save 2 tsp drippings
- Add onions shallots ,and sugar to the pan
- cook over medium heat till brown about 15 minutes
- ADD WINE STIRRING TO LOOSEN BROWNED BITS FROM PAN
- Stir in the thyme garlic and pepper cook 2 more minutes stir in a little of the cooked berry mixture and add bacon .Set aside ON A LIGHTLY FLOURED BOARD UNFOLD PUFF PASTRY CUT INTO THREE 9-INCH X3 INCH
- Transfer to parchment paper lined baking pan
- Brush dough with egg white
- TOP WITH ONION MIXTURE AND GOAT CHEESE MIXTURE
- BAKE AT 400 FOR ABOUT 16 MINUTES TILL GOLDEN BROWN
- CUT EACH RECTANGLE INTO 4 PIECES YIELDS 1 DOZEN

- IN A MEDIUM SAUCEPAN COMBINE ALL ING. COOK TILL BERRIES POP ,TASTE FOR SWEETNESS IF NEEDED ADD A LITTLE MORE SUGAR COOK NO MORE THAN 7 MIN..LET COOL BEFORE USING ,USE THE LEFTOVER BERRIES ON ANYTHING YOU LIKE AS A RELISH GREAT ON CHICKEN ALSO ;
