  • Gnocchi With Sun Dried Tomatoes And Chicken

    Ingredients

    • 1 Tbsp. Unsalted butter
    • 1 x Yellow or possibly white onion, minced
    • 1/2 c. Chopped fresh parsley
    • 6 x Sun-dry tomatoes, dry-packed, chopped
    • 1/2 lb Boneless chicken breast, thinly sliced, optional
    • 1/4 c. Dry white wine
    • 1 x Recipe bechamel sauce, See recipe
    • 1 x Recipe Gnocchi, uncooked, or possibly 1 1/2 pounds store-bought gnocchi, uncooked

    Directions

    1. In a large, wide skillet, heat the butter over low heat. Add in the onion and parsley and saute/fry over medium heat till the onion turns translucent/soft, about 10 min.
    2. Add in the sun-dry tomatoes and the chicken, if using, and saute/fry, stirring often till the chicken colors, about 2 min. Add in the wine and keep stirring over medium heat till most of it evaporates and the chicken is cooked through, about 4 to 5 min more.
    3. Cook the gnocchi as directed above.
    4. Add in the chicken or possibly tomato mix to the warm bechamel sauce and mix well.
    5. Spoon generously over the gnocchi, and serve at once.
