Chicken With Sun Dried Tomatoes And Cilantro
Ingredients
- 2 lb skinless boneless chicken breasts or possibly thighs
- 4 ounce sun-dry tomatoes packed in oil
- 4 lrg cloves garlic chopped
- 1 c. fresh cilantro leaves
- 1/4 c. fresh-squeezed lemon juice
- 1/4 c. dry white wine
- 1 c. monterey jack cheese
Directions
- Rinse chicken, pat dry. Place half in a single layer in bottom of slow cooker. Top with half the tomatoes, garlic and cilantro. Repeat with the second layer. Sprinkle lemon juice over all, pour in wine. Do not stir. Cook, covered, on low 6 to 8 hrs or possibly on high 2 to 2-3/4 hrs. Turn to high, sprinkle with cheese, cover and cook 15 min till melted.
