  • Gluten-Free Peanut Butter Cookies

    Quick and easy, made with ingredients you probably already have on hand. Who said gluten-free had to be not very tasty? You can substitute a lot of ingredients - any nut butter (almond, cashew) has been said to work, and you can use sugar substitutes such as Splenda. Add a dash of vanilla extract and chocolate chips to spice it up!

    Ingredients

    • 1 cup peanut butter
    • 1 cup sugar
    • 1 teaspoon baking powder
    • 1 egg

    Directions

    1. Preheat oven to 350°F.
    2. Cream the peanut butter and sugar together.
    3. Beat in the baking powder, then add the egg. Mix until well combined.
    4. As the cookies bake big, roll out small balls of dough - about a tablespoon is a good size. Press down on them with a fork to give them the characteristic marks.
    5. Bake for about 10 minutes, until the cookies are aromatic and soft, yet cohesive.
    6. Sprinkle sugar on top if you want, then let sit for five minutes. Transfer to a cooling rack for another five minutes.
