Serve this on a bed of rice or mashed potatoes and it's not only cost effective but filling too!

    Ingredients

    • 2 lbs lean or extra lean ground beef
    • 1 teaspoon coconut oil
    • 2 grated carrots
    • 3 cans of diced tomatoes
    • 4 cans of tomato paste
    • 4 cans of red kidney beans
    • 3 medium onions
    • 1 clove fresh garlic
    • 2 cans mushrooms (packed in water)
    • 1/4 cup of chili powder
    • 3 tablespoons of black pepper
    • 1 pinch of sea salt
    • Water

    Directions

    1. In a frying pan place 1 teaspoon of coconut oil.Once melted, add your lean or extra lean ground beef. I like to cut up the beef before adding it because it makes it all the same size when you add it to the chili pot.
    2. In a large pot add the cans of tomato paste. For each can of tomato paste you should add 2 cans of water. Stir this together and you will have your base. Strain and rince your diced tomatoes, mushrooms and kidney beans and add them to the base. Peel then grate the carrots into the base as well. Dice your onions and garlic and add in your chili powder, black pepper and salt. Once your ground beef is done, please strain it, rince it and stir into the base as well.
    3. Place this on a medium-low heat and let simmer for 2 hours - stirring every 15 to 20 minutes.
