Gluten Free Hearty Quinoa Chili
a Yummy Quiona chili. 1 Cup is 218 calories, 10 Grams of Protein and 8 Grams of Fiber!. Ingredients
- 1 tbsp Olive oil
- 1/2 Cup Quinoa- uncooked
- 3/4 cup water or chicken broth
- 1 onion-small dice
- 1/2 cup mushrooms-sliced
- 2 cloves garlic-minced
- dash of pepper
- 1 tbsp Cayenne or cajun
- 1 tsp oregano
- small shot of lime juice
- 1/4 cup fresh cilantro
- 1 Can italian diced tomatoes
- 1 can Black beans- well rinsed and Drained
Directions
- In a pot, Sautee the onion, garlic and mushrooms til the onion is tender(5-7 minutes) Add the canned tomato, water or chicken broth, the spices and the quinoa. Simmer til the quinoa is cooked( 15-20 minutes)
- Add the black beans and cilantro, let heat through(5 minutes)
