    • 2/3 cup granulated sugar
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1 cup milk
    • 2 large eggs
    • 1/2 cup (1 stick) unsalted butter, softened
    • 12 ounces dried gluten free bread cubes
    • 1/2 cup (1 stick) unsalted butter
    • 1 cup onion, chopped
    • 1 cup (3-4 stalks) celery, chopped
    • 2 large eggs
    • 2 1/2-3 cups chicken broth
    • 1 tablespoon dried parsley
    • 2 teaspoons dried sage
    • 1 teaspoon dried thyme
    • 1 teaspoon salt
    • 1/2 teaspoon pepper

Make a batch of gluten free cornbread a day or two ahead of time.2. Cut the cornbread into cubes and toast them lightly in the oven.3. Make gluten free bread cubes by cutting up 12 ounces of bread. Then toast those in the oven.4. Sauté the onions and celery. Add seasonings.5. Add the sautéed vegetables, toasted cornbread, and toasted gluten free bread cubes to a large bowl. Mix well.6. Lightly beat eggs and add to the bread cube mixture. Mix well.7. Add broth to bread cube mixture and stir with each addition.8. Spread stuffing into a prepared 9"x13" baking dish.9. Bake until golden brown. It bakes up perfectly every time.Buy two boxes and make an extra to serve on the side along with your gluten free turkey dressing and Thanksgiving dinner.Making sure it's a gluten free stuffing recipeTo make the best gluten free stuffing recipe, use a good all-purpose gluten free flour like Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour since it cooks up just like regular flour.Here’s the best way to measure gluten free flour: Believe it or not, you shouldn’t scoop gluten free flour directly out of the bag with a measuring cup.It packs down the flour and you end up with a bit too much in your cup. Too much flour means your cornbread may come out too dry.Instead, spoon the flour from the bag (or the container you keep your flour in) into your measuring cup. Then use the back of a spatula or knife to level off the top of the cup.This way the gluten free flour is given a mini-sift and isn’t packed down.Chicken broth: Also make sure to check the label of the chicken broth you’re using for any gluten.Many popular brands of chicken broth are now certified to be gluten free.However, this changes from time to time. This is probably the most challenging ingredient as the gluten free, egg-free bread I see for sale all use honey.But if you're vegan, I'm sure you know of a brand. You could also try doubling up on the cornbread.Buttery spread: Substitute a vegan buttery spread like Earth Balance instead of butter.Broth: Instead of chicken broth, use a vegan vegetable broth in this recipe for gluten free dressing.Egg substitute: Finally, instead of eggs in the vegan cornbread dressing, use an egg substitute like Bob's Red Mill Egg Replacer.Just remember to double-check that all your ingredients are both vegan and gluten free to keep this a gluten free dressing for Thanksgiving.More tips for making gluten free dressing for turkeyReduce the sugar: When baking the cornbread, you can reduce the sugar using a sugar substitute like monk fruit sweetener or Swerve Sweetener.Use fresh herbs: You can also use fresh herbs leftover from other Thanksgiving recipes to this gluten free cornbread stuffing.The correct ratio is one tablespoon of fresh herbs to one teaspoon of dried herbs.1/2 cup fresh parsley2 tablespoons fresh sage1 tablespoon fresh thymeDairy free?
