  • Ginisang Ampalaya-Sitaw

    Bitter gourd with string beans and egg... a must for those who have low hemoglobin. It's like enjoying a nice veggie meal while getting better :)

    Ingredients

    • 1 pc med Ampalaya, cut in half - julliened
    • 1 bunch String beans, cut 1-inch long
    • 2 large Eggs, beaten
    • 1 med onion, sliced
    • 2 cloves, garlic, minced
    • 3 med red tomatoes, diced
    • canola oil
    • salt and pepper to taste
    • 1 cup sotanghon (Optional)
    • 2 cups meat broth

    Directions

    1. Saute onions, garlic, tomatoes in hot canola oil in a deep pot.
    2. Add the ampalaya and string beans and stir fry thoroughly to mix altogether.
    3. Add 1 cup of chicken/pork broth.
    4. Let it simmer.
    5. Once the vegetables are tender enough, add salt and pepper to taste.
    6. Pour in the beaten eggs and stir to avoid egg lumps.
    7. Add the sotanghon if desired.
    8. Simmer for a minute or two.
    9. Serve with steamed rice.
