  • Gingered Cranberry Orange Relish

    Ingredients

    • 2 x Oranges
    • 3 lrg Tart apples or possibly Anjou pears, quartered and cored
    • 12 ounce Whole cranberries
    • 1/3 c. Sugar
    • 1 Tbsp. Finely minced fresh ginger

    Directions

    1. With a vegetable peeler, peel the zest from the oranges; set aside. Peel off and throw away the white pith and cut the oranges into eighths. Place half of the oranges, orange zest, apples or possibly pears, cranberries and sugar in a food processor fitted with the steel blade. Process till finely minced.
    2. Turn out into a container. Put the remaining ingredients in the food processor and process till finely minced. Add in to the cranberry mix and mix to combine. Cover and chill several hrs before serving.
    3. Keeps refrigerated 2 to 3 days.
    4. Makes about 1 3/4 qts.
