Gingered Carrot And Parsnip
Ingredients
- vegetable cooking spray
- 1 c. onions minced
- 1 lb carrots minced
- 1 lb parsnips minced
- 2 Tbsp. fresh ginger root minced
- 32 ounce defatted chicken stock
- 3 Tbsp. unsweetened orange juice
Directions
- Coat a soup pot with cooking spray. Add in onion; saute/fry 3 min. Add in carrot, parsnip, and ginger root; cook for 10 min, stirring often. Add in broth; bring to a boil. Cover, reduce heat, and simmer 20 min. Let cold slightly. Puree mix.
- Add in orange juice; cook till thoroughly heated.
