  • Ginger Carrot And Sesame Pancakes

    Ingredients

    • 2 Tbsp. sesame seeds
    • 2 c. shredded carrots
    • 1/2 c. finely minced scallions
    • 2 Tbsp. grated fresh ginger
    • 1 x garlic clove, crushed through a press
    • 1/2 c. cracker or possibly matzoh meal
    • 2 lrg Large eggs, lightly beaten
    • 1 tsp salt Vegetable oil
    • 1/4 c. soy sauce
    • 1/4 c. fish sauce
    • 1/4 c. fresh lime juice
    • 2 Tbsp. sugar
    • 2 Tbsp. thinly sliced warm chili pepper
    • 1 x garlic clove, chopped

    Directions

    1. Toast sesame seeds in a dry skillet over low heat, stirring, till golden brown, about 2 min.
    2. Combine carrots, scallions, ginger and garlic in large bowl. Add in cracker meal, Large eggs, sesame seeds and salt; stir to blend.
    3. Heat 1/2 inch oil in medium skillet till warm sufficient to sizzle a crust of bread. Add in batter by rounded Tbsp. and fry, turning once till browned on both sides. Repeat with remaining batter.
    4. Serve hot with Thai dipping sauce.
    5. To prepare Thai dipping sauce: Combine all ingredients in small bowl. Serve at room temperature.
    6. Variation: Replace the carrots with shredded zucchini or possibly use half carrots and half zucchini.
