Ginger, Carrot, And Daikon Salad
Ingredients
- 1 lrg Daikon radish, julienned
- 2 med Carrots, julienned
- 6 x Radishes, thinly sliced
- 3 Tbsp. Seasoned rice vinegar
- 1 Tbsp. Minced gingerroot
- 2 x Cloves garlic, minced
- 1 Tbsp. Asian chile sauce
- 1/2 tsp Minced cilantro
- 1/3 c. Vegetable oil Soy sauce to taste
Directions
- Place julienned daikon, carrot, and radish in a bowl and toss.
- For the dressing, place vinegar, gingerroot, garlic, chili sauce, and cilantro in a small bowl and mix well. Whisk in oil till well blended.
- Season with soy sauce.
- Pour dressing over radish mix and marinate 30 min. Serve cool or possibly at room temperature.
- Serves four.
