  • German Potato Salad

    My mom was raised in a very dedicated German family this was one of my favorite German dishes she made while growing up. It can make a nice variation to your BBQ menu & be a nice surprise for your guests or family. It also goes nicely with any meal as a substitute for regular potato salad. If you have never had German Potato Salad you are in for a true delight! Enjoy!

    Ingredients

    • 5 Large potatoes (cooked in jackets)
    • 1 large cucumber
    • 1/2 LB bacon (fried & broken)
    • 3 hard boiled eggs
    • 1 large onion sliced
    • 2/3 c sour cream
    • 1/3 c mayo
    • salt & pepper to taste

    Directions

    1. Peel & slice potatoes.
    2. Peel & slice cucumbers lightly salt & let stand.
    3. Place potatoes in a large bowl add onion,eggs & cucumbers.
    4. Add bacon & a small amount of bacon drippings over mixture.
    5. Salt & pepper to taste.
    6. Make a mixture of sour cream & mayo pour over salad & mix well.
    7. let stand in fridge for 2-3 hours or overnight prior to serving.

          I absolutely love German food. My first motherinlaw cooked it. Love Saurebraten? This is one of my favorite potato salads, I love that the cucumber in this never had it that way she put bacon and boiled eggs cant wait to try it! thank you!!!!
