Gazpacho (Cold Tomato Soup)
Ingredients
- 1 c. Minced, seeded bell pepper
- 3 c. Peeled, seeded, minced tomatoes
- 1 c. Peeled, seeded, minced cucumber
- 1/2 c. Minced red onion
- 1/4 c. Sliced celery
- 1/4 c. Minced cilantro leaves
- 1 tsp Minced garlic
- 2 Tbsp. Extra virgin olive oil
- 2 Tbsp. Cidar vinegar
- 1 Tbsp. Lime juice
- 1/2 tsp Paprika
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/4 tsp Cumin
- 1/8 tsp Caynne pepper
- 1 1/2 c. Tomato juice
Directions
- Here is a wonderful cool soup which is perfect for the 9 days as well as all summer long.
- Restaurant in New York City. I found it in a copy of the Washington Post sometime last year.
- garnish with fresh dill and/or possibly cilantro leaves. Serve in chilled plates.
- The recipe can be expanded to suit your needs.
