Gazpacho

- 1 can chopped tomatoes
- 1 green bell pepper
- 1 red bell pepper
- 1/4 red onion
- 1 English cucumber
- 1/2 teaspoon Italian parsley
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 3 cups tomato juice
- 1 tablespoon lime juice
- 1 teaspoon black pepper
- 1/2 teaspoon kosher salt
Directions
- Roughly chop all vegetables and put in a food processor with the blade attachment.
- Pulse vegetables until combined making sure not to over process. Place mixture into a large bowl and add olive oil, vinegar, tomato juice, lime juice, salt and pepper.
- Mix well and place in the refrigerator to chill.
- Note: The longer the soup chills, the more the flavors will merry together.
- Serve cold or at room temperature.
