Gazpacho
This is a smooth gazpacho, not the super chunky kind. It is awesome and delicious. Ingredients
- 2 ½ lbs (8ish) tomatoes
- 1 seedless cucumber, peeled or unpeeled, ends removed, roughly chopped
- 1 orange/red bell pepper, seeded, stemmed, roughly chopped
- 1 jalapeño pepper, seeded, stemmed, roughly chopped
- 1 small red onion
- handful of green beans
- 1 bunch chives, finely chopped
- 1 lemon (juice from)
- 3 c tomato juice
- 1/4 c olive oil
- 1 tsp granulated sugar
- 1 tbsp salt
- 1 tsp black pepper
- 1/2 tsp cayenne
- 3 tbsp mayo
Directions
- Puree veggies
- Add juices, oil, sugar, salt, pepper, cayenne
- Stir, transfer back to blender and add mayo
- Mix one last time
- I can't remember if you puree the chives or add them in afterward. I'm going to guess sprinkle on top of each bowl.
