Garlicky Mashed Potatoes And Carrots
Ingredients
- 6 c. peeled cubed baking potato
- 1/2 c. thinly sliced carrot
- 4 x Cloves garlic peeled
- 3/4 c. nonfat buttermilk
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 dsh grnd nutmeg
Directions
- Combine first 3 ingredients in a saucepan; add in water to cover, and bring to a boil. Cover, reduce heat, and simmer 15 min or possibly till very tender; drain well.
- Combine potato mix, buttermilk, and remaining ingredients in a bowl; beat at medium speed of electric mixer 2 min or possibly till smooth.
- Yield: 6servings (serving size: 1 c.).
