Ingredients

  • 6 c. peeled cubed baking potato
  • 1/2 c. thinly sliced carrot
  • 4 x Cloves garlic peeled
  • 3/4 c. nonfat buttermilk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 dsh grnd nutmeg

Directions

  1. Combine first 3 ingredients in a saucepan; add in water to cover, and bring to a boil. Cover, reduce heat, and simmer 15 min or possibly till very tender; drain well.
  2. Combine potato mix, buttermilk, and remaining ingredients in a bowl; beat at medium speed of electric mixer 2 min or possibly till smooth.
  3. Yield: 6servings (serving size: 1 c.).
