A hearty and satisfying Vegetable soup which uses hand on ingredients at home and comes together in less than half hour. Any combination of vegetables you have at home can be used. It's also a great way of adding veggies to your diet.
Serve with some crunchy bread to make it a whole meal.
Garden Vegetable Soup:
(Serves 3 to 4)
Ingredients:
Tomato paste - 1 tbsp.
Vegetable oil- 1 tbsp.
Dried Oregon to taste
Dried basil to taste
Italian seasoning to taste
Salt to taste
Lemon juice to taste (optional)
Procedure:
Heat oil in a heavy bottomed pan. When the oil gets hot, add the onion, celery and garlic. Add a pinch of salt and sauté for about five minutes till onion gets soft, stirring often.
Add in the carrot, green beans and potato . Sautée for another five minutes, stirring often.
Add the chopped tomato, vegetable stock, tomato paste and corn kernels.
Add the Oregon, basil and crushed black pepper.
Bring to a boil and reduce the heat.
Simmer for atleast fifteen minutes or until the beans and potato are tender .
Check for seasoning and lemon juice and serve hot.
