Frye Family's Favorite Squash Casserole
Ingredients
- 1 lb Minced yellow squash or possibly zucchini or possibly a mix of the two
- 1 x Onion, minced
- 3 Tbsp. Butter or possibly margarine
- 2 x Beaten Large eggs
- 1/2 c. Shredded cheddar cheese (up to 1)
- 1 tsp Salt
- 1 c. Lowfat milk
- 1 c. Cracker crumbs (saltines, crushed)
- 1 dsh Pepper
Directions
- Preheat oven to 375 degrees. Combine squash,onion and butter in a skillet.
- Saute/fry till squash is tender, then coarsely mash with fork.
- Add in remaining ingredients. Pour in a greased casserole dish. (Top with additional cheddar, if you like) Bake about 30 min, covered or possibly till a knife inserted near the center comes out clean. Let stand 5 min before serving.
- Notes: Leftovers reheat well. Casserole can be prepared to the baking point then refrigerated or possibly frzn. If frzn, let defrost before baking.
