  • Frye Family's Favorite Squash Casserole

    Ingredients

    • 1 lb Minced yellow squash or possibly zucchini or possibly a mix of the two
    • 1 x Onion, minced
    • 3 Tbsp. Butter or possibly margarine
    • 2 x Beaten Large eggs
    • 1/2 c. Shredded cheddar cheese (up to 1)
    • 1 tsp Salt
    • 1 c. Lowfat milk
    • 1 c. Cracker crumbs (saltines, crushed)
    • 1 dsh Pepper

    Directions

    1. Preheat oven to 375 degrees. Combine squash,onion and butter in a skillet.
    2. Saute/fry till squash is tender, then coarsely mash with fork.
    3. Add in remaining ingredients. Pour in a greased casserole dish. (Top with additional cheddar, if you like) Bake about 30 min, covered or possibly till a knife inserted near the center comes out clean. Let stand 5 min before serving.
    4. Notes: Leftovers reheat well. Casserole can be prepared to the baking point then refrigerated or possibly frzn. If frzn, let defrost before baking.
    5. I could make a meal out of this, best squash recipe I have tried.
