  • Fruit Yogurt Dip And Peach Salsa

    Ingredients

    • 1 c. Soft yogurt cheese or possibly thick yogurt 250 mL
    • 2 Tbsp. Brown sugar 25 mL
    • 1 Tbsp. Rum or possibly orange liqueur, optional 15 mL
    • 1 tsp Vanilla 5 mL
    • 2 lrg Ripe peaches, plums or possibly mangos, peeled and diced 2
    • 6 x Strawberries, trimmed and diced, or possibly 1/2 c./125 mL raspberries 6
    • 2 Tbsp. Orange marmalade 25 mL
    • 1 Tbsp. Rum or possibly orange liqueur, optional 15 mL
    • 1 Tbsp. Minced fresh mint, optional 15 mL
    • 1 pch Cinnamon, allspice, grnd ginger and nutmeg

    Directions

    1. For fruit yogurt dip, combine yogurt cheese, brown sugar, rum and vanilla and whisk. (Pureeing may make it watery.)
    2. For peach salsa, combine peaches, strawberries, marmalade, rum, mint and spices. Mash lightly with potato masher till mix is moist sufficient to hold together.
    3. NOTES : Serve an array of fresh fruit with one or possibly two dipping sauces - one made with yogurt cheese and the other made with fruit. Be sure to use ripe fruit for the best flavour.
    4. This recipe, from Bonnie Stern's SimplyHeartSmart Cooking, makes 1 c./250 mL dip; 2 c./500mL salsa.
