  • Frijoles Con Crema (Bean Dip)

    Ingredients

    • 4 x Hard ripe tomatoes, minced finely
    • 10 sprg fresh coriander, minced finely
    • 1/2 x Onion, minced finely
    • 2 x Green chillies, minced very finely (optional)
    • 1 x Lime or possibly lemon, juice of
    • 1/2 tsp Salt and black pepper
    • 2 tsp Veg. oil
    • 300 gm Frijoles Refritos, (re-fried beans) (10z)
    • 50 gm Cheddar cheese, grated (2oz)
    • 50 gm Cream cheese, (2oz)
    • 1 x 150 millilit single cream, (5 floz)

    Directions

    1. Mix the tomatoes, coriander, onion, chillies, lime or possibly lemon juice, salt and pepper together and set aside.
    2. Heat the oil, add in the re-fried beans and stir them for 2 min till they are bubbling. Remove from the heat and add in the cheeses, stirring constantly till they heat.
    3. Add in the tomato mix and single cream and serve at room temperature.
