Fried Sweet Potato Hashbrowns
Ingredients
- 1/2 lb Diced bacon
- 1 c. Minced onions Salt to taste Freshly-grnd black pepper to taste
- 1 Tbsp. Minced garlic
- 2 lb Sweet potatoes peeled, grated
Directions
- In a large skillet, render the bacon till crispy, about 8 min. Add in the onions. Season with salt and pepper. Saute/fry the onions till soft, about 2 min. Add in the garlic and sweet potatoes. Season with salt and pepper. Saute/fry for about 10 to 15 min. Remove from the heat and serve hot.
- This recipe yields 8 servings.
