  • Fried Rice

    Basic Fried Rice recipe by Rhonda Parkinson @ About.com

    Ingredients

    • 2 large eggs
    • 1 tsp. salt
    • pepper to taste
    • 4 Tbsp oil
    • 4 cups cooked rice
    • 1 - 2 Tbsp light soy sauce

    Directions

    1. Lightly beat eggs with the salt and pepper.
    2. Heat fry pan and add 2 Tbsp oil.
    3. When the oil is hot, add the eggs.
    4. Cook, stirring, until they are lightly scrambled but not too dry.
    5. Remove the eggs and clean out the pan.
    6. Add 2 Tbsp oil.
    7. Add the rice.
    8. Stir-fry for a few minutes, using a wooden spoon to break it apart.
    9. Stir in the soy sauce.
    10. When the rice is heated through, add the scrambled egg back into the pan.
    11. Mix thoroughly.
