    Greatest pie/tart using fresh fruits, a sweet cream base and wonderful fresh fruit makes this dessert just disappear!.

    Ingredients

    • one 9" shallow pie shell
    • one kiwi fruit
    • one cup cut fresh strawberries
    • 1/2 cup fresh raspberries
    • one lemon for zest and juice
    • 1/2 cup Mascarpone cheese
    • 1-1/2 cup confectioners sugar
    • one teaspoon Pure Vanilla Extract

    Directions

    1. Bake pie crust 8 minutes @ 375 F or until lightly golden brown, allow to completely cool
    2. Cut the fruit (strawberries, kiwi)
    3. In a mixing bowl add cold mascarpone cheese, confectioners sugar and vanilla and stir well to combine (make sure it is creamy and spreadable
    4. Coat the cooled pie/tart shell well with the mixing bowl ingredients, spread evenly, add lemon juice and zest and begin adding the fruit, from the back add strawberries, raspberries, kiwi
    5. Chill about 30 minutes before slicing and serving
    6. Delicious and a family favorite
