Fresh Seasonal Fruit Tart

- one 9" shallow pie shell
- one kiwi fruit
- one cup cut fresh strawberries
- 1/2 cup fresh raspberries
- one lemon for zest and juice
- 1/2 cup Mascarpone cheese
- 1-1/2 cup confectioners sugar
- one teaspoon Pure Vanilla Extract
Directions
- Bake pie crust 8 minutes @ 375 F or until lightly golden brown, allow to completely cool
- Cut the fruit (strawberries, kiwi)
- In a mixing bowl add cold mascarpone cheese, confectioners sugar and vanilla and stir well to combine (make sure it is creamy and spreadable
- Coat the cooled pie/tart shell well with the mixing bowl ingredients, spread evenly, add lemon juice and zest and begin adding the fruit, from the back add strawberries, raspberries, kiwi
- Chill about 30 minutes before slicing and serving
- Delicious and a family favorite
