Fresh Pesto Pasta Salad
Ingredients
- 1 pkt small shell pasta - (16 ounce)
- 1/3 c. red wine vinegar
- 1 Tbsp. sugar
- 1 tsp seasoned pepper
- 1/2 tsp salt
- 1 tsp Dijon mustard
- 1 x garlic clove pressed
- 3/4 c. extra virgin olive oil
- 1 c. minced fresh basil
- 1 pkt shredded Parmesan cheese - (3 ounce)
- 1/2 c. toasted pine nuts Gourmet mixed baby salad greens Grape tomatoes Yellow pear-shaped tomatoes - (small)
Directions
- Prepare pasta according to package directions; drain.
- Whisk together vinegar and next 5 ingredients. Gradually whisk in extra virgin olive oil.
- Add in vinaigrette to pasta. Add in basil, cheese, and pine nuts; toss to combine. Garnish, if you like.
- This recipe yields 8 servings.
