  • Salmon And Pesto Pasta Salad

    Ingredients

    • 1 lb Salmon cooked and flaked
    • 6 ounce Pasta shells
    • 1 lb Cherry tomatoes
    • 5 ounce Mange tout
    •     Pesto dressing, (2 Tbsp. light extra virgin olive oil mixed with 1 Tbsp. white wine vinegar and 1 Tbsp. pesto)

    Directions

    1. Cook and drain pasta shells according to instructions. Plunge mange tout in saucepan of boiling water for 1 minute, allow to cold. Halve cherry tomatoes. Dress salmon, pasta shells, cherry tomatoes and mange tout separately with pesto dressing. Begin layering by compacting salmon in the bottom of a round pyrex bowl. Follow with a layer of pasta shells. Then add in tomatoes and lastly the mange tout. Cover with a large plate and leave in a cold place for at least an hour. Turn upside down onto a plate and serve.
    2. NOTES : Perfect for a picnic - layer the salad into a bowl and cover with a plate - when you reach your picnic site just turn it upside down and serve.
