Fresh Herb Sauce ( Salsa Di Erbe )
Ingredients
- 1/2 x stale ciabatta or possibly similar loaf
- 1 Tbsp. red wine vinegar
- 2 clv garlic peeled and crushed
- 2 Tbsp. salted capers minced
- 4 x salted anchovies minced
- 1 x fresh red chilli seeded and minced sea salt and freshly grnd black pepper
- 8 Tbsp. mixed fresh herbs (mint basil oregano marjoram parsley)
- 75 ml extra virgin extra virgin olive oil
Directions
- Soak the bread in the red wine vinegar and 1/2 c. water for 10 min.
- Remove and squeeze out the liquid and put the bread in a large bowl.
- Add in the crushed garlic capers and minced anchovies and incorporate into the bread.
- Add in the chilli and season.
- Chop a generous amount of each herb and mix into the bread.
- Slowly pour in the extra virgin olive oil in a steady stream till the sauce has a rough thick bready texture.
