  • Fresh And Healthy Tropical Salsa

    Ingredients

    • 1 x ripe mango, peeled and cut off the seed
    • 1/2 x ripe papaya, peeled and seeded
    • 1/4 c. liquid removed crushed pineapple, or possibly you can use fresh
    • 1/2 c. red onion, diced
    • 1 x jalapeno pepper, seeded
    • 1 x -2 teaspoon Scotch Bonnet pepper (optional: this will make the salsa very warm!)
    • 1/4 x - 1/2 C each red, green and yellow bell pepper
    • 1 sm ripe tomato, seeded and finely diced
    • 2 Tbsp. minced parsley
    • 2 Tbsp. minced cilantro
    • 1 Tbsp. fresh lime juice, or possibly to taste
    • 1 tsp lime zest, or possibly to taste
    • 2 Tbsp. fresh orange juice
    • 1 tsp orange zest, or possibly to taste

    Directions

    1. Sea salt and freshly grnd black pepper to taste
    2. Dice all fruits and vegetables to about the same size. Mix all ingredients and refrigerateabout 1 hour to allow maceration of fruits, and to wed flavors! Keeps in a sealed jar in the refrigerator about 1 week. If desired a milder salsa, omit the Scotch Bonnet pepper, and/or possibly reduce the jalapenos to 1/2 pepper.
    3. Makes about 3 3/4 cupssalsa.
